- 2 Ounces (oz) fresh basil leaves, divided
- 0.5 Cups olive oil
- 0.5 Cups balsamic vinegar
- 6 Skinless, boneless chicken breast halves
- 1 Tablespoon (tbsp) salt, seasoned
- 1.5 Teaspoons (tsp) black pepper, ground
- 1 Pound (lb) penne pasta
- 2 Pints (pt) grape tomatoes, sliced
- 0.25 Cups olive oil
- 0.25 Cups balsamic vinegar
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste

- Mince the garlic cloves using a food processor or blender. Add 1/3 of the basil leaves and chop until fine. Pour in 0.5 cups of olive oil and process until the mixture turns light yellow with basil flecks. Add balsamic vinegar and process until combined.
- Place chicken breasts in a large zip-top bag with 1 tablespoon salt, 1.5 teaspoons black pepper, and the garlic-basil mixture. Seal the bag, removing air, and marinate for 2 hours or overnight, turning occasionally.
- Preheat the oven to 300°F (150°C).
- Brown the chicken in a large skillet over high heat for about 4-5 minutes per side. Transfer to a baking dish and bake until cooked through, about 15-20 minutes. Slice into 1/4 inch strips and return to the dish to absorb juices. Keep warm.
