  • 1 Pound (lb) sweet potato, peeled
  • 0.5 Cups (c) butter, softened
  • 1 Cup (c) white sugar
  • 0.5 Cups (c) milk
  • 2 Large eggs
  • 0.5 Teaspoon (tsp) nutmeg, ground
  • 0.5 Teaspoon (tsp) cinnamon, ground
  • 1 Teaspoon (tsp) vanilla extract
  • 1 9 Inch unbaked pie crust

Steps

  1. Gather all the ingredients.
  2. Place the whole sweet potato in a pot and cover with water. Bring to a boil and cook until tender, about 40 to 50 minutes.
  3. Preheat the oven to 350 degrees F (175 degrees C). Remove the sweet potato from the pot, run under cold water, and peel off the skin. Break the sweet potato flesh apart and place it in a bowl.
  4. Add the softened butter to the sweet potato and mix with an electric mixer until well combined.
  5. Add sugar, milk, eggs, nutmeg, cinnamon, and vanilla to the sweet potato mixture. Beat on medium speed until the mixture is smooth.
