Ingredients
- 2 Cups butter
- 3 Cups white sugar
- 6 Large eggs
- 8 Cups all-purpose flour
- 7 Teaspoons (tsp) baking powder
- 2 Tablespoons (tbsp) vanilla extract
- 1 Pinch salt
- 2 Cups whole milk
- 4 Pounds dried figs, ground
- 1 Pound raisins, ground
- 2 Teaspoons (tsp) ground cinnamon
- 0.5 Cups white sugar
- 1 Whole orange, zested
- 1 Small apple, minced
- 1.5 Cups pecans, chopped
- 1 Cup water (Optional)
Steps
- Prepare the Dough: In a medium bowl, beat together the sugar and butter until light and fluffy. Add eggs, vanilla, and salt. Gradually blend in flour and baking powder by hand. Knead the dough until smooth and workable, adding milk as needed to achieve the right consistency.
- Make the Filling: Grind figs, raisins, orange, and apple together. If the mixture is too dry, gradually add up to 1 cup of water. Mix in ground cinnamon and chopped pecans by hand until well combined. The mixture should be sticky.
- Preheat Oven: Set the oven to 375°F (190°C).
- Assemble Cookies: Roll out the dough thinly. Spoon the fig mixture in a line down the center of the dough. Wrap the dough over the filling, sealing it inside. Trim to desired length with diagonal cuts and make small diagonal slits on the sides. Arrange on an ungreased cookie sheet.
- Bake: Place cookies in the preheated oven and bake until edges are golden brown, about 10 to 15 minutes. Allow cookies to cool briefly on the sheet before transferring to a wire rack to cool completely.
Enjoy these traditional Italian Fig Cookies as a delightful treat during the holiday season or any special occasion!
