Ingredients

  • 1 - 10 Pounds (lb) whole bone-in ham, scored
  • 2 - Teaspoons (tsp) whole cloves
  • 0.25 - Teaspoons (tsp) cinnamon, ground
  • 2 - Tablespoons (tbsp) mustard, seasoned
  • 0.5 - Cups brown sugar, packed
  • 0.25 - Cups brown sugar, packed
  • 2 - Tablespoons (tbsp) apple cider vinegar
  • 1 - Cup peach nectar
  • 1 - Cup peach preserves
  • 5 - Cups peach slices, frozen
  • 2 - Teaspoons (tsp) ginger root, minced
  • 1 - Whole hot cherry pepper, minced
  • 1 - 3 Inch cinnamon stick

Steps

  1. Preheat the oven to 325°F (165°C). Score the top of the ham in a diamond pattern using a serrated knife. Press whole cloves into the ham and place it on a roasting rack in a roasting pan.
  2. Bake the ham for 1.5 to 2 hours in the preheated oven, or until the internal temperature reaches 140°F (60°C). Cover with aluminum foil if the ham starts to look dry.
  3. While the ham is baking, mix together 0.25 teaspoons of ground cinnamon, 2 tablespoons of brown mustard, and 0.5 cups of brown sugar in a small bowl. Set aside.
  4. In a saucepan over medium heat, combine the remaining 0.25 cups of brown sugar, 2 tablespoons of apple cider vinegar, 1 cup of peach nectar, and 1 cup of peach preserves. Bring to a boil, then stir in 5 cups of frozen peach slices, 2 teaspoons of minced fresh ginger root, 1 minced hot cherry pepper, and the 3-inch cinnamon stick. Simmer until the peaches are tender and the sauce has thickened, about 25 to 30 minutes.
  5. Remove the ham from the oven and brush liberally with the mustard glaze. Increase the oven temperature to 350°F (175°C) and return the ham to the oven, uncovered.
  6. Bake for an additional 20 to 30 minutes, or until the glaze is bubbly. Allow the ham to rest for 15 to 20 minutes before carving. Serve with the hot Peach-Ginger sauce.
