- Use a sharp knife or scissors to remove the silverskin and trim excess fat from the tenderloin. Fold the thinner end under to match the thickness of the rest of the roast and tie with butcher's twine to secure. Tie the tenderloin at 1.5 to 2-inch intervals to maintain its shape during cooking.
- In a small bowl, mix together the minced garlic, olive oil, rosemary, black pepper, thyme, and salt. Rub this mixture over the tenderloin to coat it evenly. Let it sit while you preheat the grill.
- Light a charcoal fire in one half of a charcoal grill or preheat a gas grill to high for 10 minutes. Lightly oil the grill grate.
