  • 1 Teaspoon (tsp) kosher salt
  • 1 Pound (lb) ground lamb
  • 3 Tablespoons (tbsp) onion, grated

  • 1 Tablespoon (tbsp) coriander, ground
  • 1 Teaspoon (tsp) cumin, ground
  • 0.5 Tablespoons (tbsp) cinnamon, ground
  • 0.5 Teaspoons (tsp) allspice, ground
  • 0.25 Teaspoons (tsp) cayenne pepper
  • 0.25 Teaspoons (tsp) ginger, ground
  • 0.25 Teaspoons (tsp) black pepper, ground
  • 28 Bamboo skewers, soaked

Steps

  1. Mash the garlic into a paste with the salt using a mortar and pestle or the flat side of a chef's knife on your cutting board.
  2. In a mixing bowl, combine the garlic paste with the ground lamb, grated onion, parsley, coriander, cumin, cinnamon, allspice, cayenne pepper, ginger, and black pepper. Mix until well blended.
  3. Form the mixture into 28 balls. Shape each ball around the tip of a skewer, flattening it into a 2-inch oval. Repeat with the remaining skewers. Place the kebabs onto a baking sheet, cover, and refrigerate for at least 30 minutes, or up to 12 hours.
  4. Preheat an outdoor grill to medium heat and lightly oil the grate.
  5. Cook the skewers on the preheated grill, turning occasionally, until browned and cooked through, about 5 to 6 minutes. An instant-read thermometer inserted into the center of a kebab should read at least 145 degrees F (63 degrees C).
