Ingredients
- 2 Cups all-purpose flour
- 1 Teaspoon salt
- 0.25 Cup cold unsalted butter, divided
- 3 Tablespoons shortening, divided
- 1 Large egg, whisked
- 1 Tablespoon ice-cold water
- 3 Very ripe (black) plantains, peeled
- 0.25 Cup white sugar
- 1 Teaspoon vanilla extract
- 1 Teaspoon nutmeg, grated
- 2 Drops red food coloring, divided
- 1 Large egg white, whisked
- 1 Pinch white sugar, to taste
Steps
- Combine flour and salt in a bowl. Rub in butter and shortening until the mixture resembles sand. Mix in the whisked egg and water until a dough forms. Knead the dough briefly on a work surface, wrap in plastic, and chill for 3 hours.
- While the dough chills, peel and slice plantains into thirds. Simmer in a saucepan with a little water until tender, about 5 to 10 minutes. Drain and mash with sugar, vanilla, nutmeg, and food coloring. Let cool.
- Preheat the oven to 350°F (175°C).
- Roll out the dough on a floured surface to 1/4-inch thick. Cut into 4- or 5-inch circles. Place plantain filling in the center of each circle, fold in half to form a half-moon, and seal edges. Place on a baking sheet, brush with egg white, and sprinkle with white sugar.
- Bake for 20 to 25 minutes until golden brown. Cool to room temperature before serving.
