  • 1 Tablespoon (tbsp) cornstarch
  • 1 Pinch salt, to taste
  • 1 Teaspoon (tsp) cinnamon, ground

  • 0.25 Teaspoon (tsp) cloves, ground
  • 1 Cup sour cream
  • 1 Tablespoon (tbsp) lemon juice
  • 1 Cup raisins
  • 2 Egg yolks, whisked
  • 0.5 Cup walnuts, chopped
  • 1 8-Inches (in) pastry shell, baked and cooled
  • 2 Egg whites
  • 0.25 Teaspoon (tsp) cream of tartar
  • 0.25 Cup white sugar

Steps

  1. In a saucepan, combine 0.75 cups of white sugar, 1 tablespoon of cornstarch, 1 pinch of salt, 1 teaspoon of ground cinnamon, 0.5 teaspoons of ground nutmeg, and 0.25 teaspoons of ground cloves. Stir in 1 cup of sour cream and 1 tablespoon of lemon juice. Add 1 cup of raisins. Bring to a boil over medium heat, stirring constantly until thick. Remove from heat.
  2. Stir a small amount of the hot mixture into the 2 whisked egg yolks, then return this to the hot mixture. Cook and stir for one minute. Cool the filling to lukewarm, then add 0.5 cups of chopped walnuts. Pour into the cooled pie shell.
  3. Beat 2 egg whites with 0.25 teaspoon of cream of tartar to soft peaks. Gradually add 0.25 cups of sugar; beat until stiff peaks form and all the sugar is dissolved. Spread meringue on the pie, carefully sealing to the edges.
  4. Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes until the meringue is golden brown. Let cool before serving.
