  • 0.5 Pounds (lb) dried rice noodles
  • 1 Pound (lb) skinless, boneless chicken breast halves, marinated
  • 1 Dash soy sauce
  • 1 Whole green bell pepper, sliced
  • 1 Whole red bell pepper, sliced
  • 1 Whole cucumber, sliced
  • 1 Whole carrot, grated
  • 10 Whole mushrooms, sliced
  • 1 Whole onion, minced
  • 2 Cloves garlic, minced
  • 1 Tablespoon (tbsp) ginger root, minced
  • 1.5 Tablespoons (tbsp) red chile sauce
  • 0.75 Cups peanut sauce
  • 2 Tablespoons (tbsp) oyster sauce
  • 1 Tablespoon (tbsp) sesame oil
  • 1 Tablespoon (tbsp) sesame seeds

Steps

  1. Cook the rice noodles according to the package directions. Drain and set aside.
  2. Slice the chicken breasts into strips and marinate them in soy sauce for about 30 minutes.
  3. In a large saucepan or wok, heat the sesame oil over medium heat. Add the marinated chicken and cook until no longer pink.
  4. Add the minced garlic, ginger, and onion to the pan. Cook until the onion is tender.
  5. Stir in the sliced mushrooms and cucumber until the mushrooms are tender.
  6. Add the sliced bell peppers, grated carrot, peanut sauce, oyster sauce, and red chile sauce. Stir well and heat through.
  7. Toss the cooked rice noodles with the sautéed mixture until well combined.
  8. Garnish with sesame seeds before serving.
