Ingredients
- 0.5 Pounds (lb) dried rice noodles
- 1 Pound (lb) skinless, boneless chicken breast halves, marinated
- 1 Dash soy sauce
- 1 Whole green bell pepper, sliced
- 1 Whole red bell pepper, sliced
- 1 Whole cucumber, sliced
- 1 Whole carrot, grated
- 10 Whole mushrooms, sliced
- 1 Whole onion, minced
- 2 Cloves garlic, minced
- 1 Tablespoon (tbsp) ginger root, minced
- 1.5 Tablespoons (tbsp) red chile sauce
- 0.75 Cups peanut sauce
- 2 Tablespoons (tbsp) oyster sauce
- 1 Tablespoon (tbsp) sesame oil
- 1 Tablespoon (tbsp) sesame seeds
Steps
- Cook the rice noodles according to the package directions. Drain and set aside.
- Slice the chicken breasts into strips and marinate them in soy sauce for about 30 minutes.
- In a large saucepan or wok, heat the sesame oil over medium heat. Add the marinated chicken and cook until no longer pink.
- Add the minced garlic, ginger, and onion to the pan. Cook until the onion is tender.
- Stir in the sliced mushrooms and cucumber until the mushrooms are tender.
- Add the sliced bell peppers, grated carrot, peanut sauce, oyster sauce, and red chile sauce. Stir well and heat through.
- Toss the cooked rice noodles with the sautéed mixture until well combined.
- Garnish with sesame seeds before serving.
