Ingredients

  • 1 Tablespoon (tbsp) bacon drippings
  • 0.33 Cups onion, minced
  • 2 Whole garlic cloves, minced
  • 1 Tablespoon (tbsp) ginger, minced
  • 1.5 Cups ketchup
  • 0.25 Cups Worcestershire sauce
  • 0.25 Cups soy sauce
  • 1 Cups brown sugar, packed
  • 1 Cups balsamic vinegar
  • 0.25 Cups lemon juice, fresh
  • 1 Teaspoon (tsp) chipotle chile sauce
  • 2 Tablespoons (tbsp) mustard, ground
  • 0.5 Teaspoons (tsp) chile pepper, ground
  • 1 Teaspoon (tsp) black pepper, ground
  • 1 Pinch kosher salt
  • 0.5 Teaspoons (tsp) cumin, ground
  • 1 Teaspoon (tsp) coriander, ground
  • 0.5 Teaspoons (tsp) paprika, ground

Steps

  1. Heat the bacon drippings in a saucepan over medium heat. Add the minced onion and cook until soft, about 7 minutes.
  2. Stir in the minced garlic and ginger, cooking for an additional 30 seconds. Reduce the heat to low.
  3. In a separate bowl, combine the ketchup, Worcestershire sauce, soy sauce, brown sugar, balsamic vinegar, lemon juice, chipotle sauce, mustard, ground chile pepper, black pepper, salt, cumin, coriander, and paprika.
  4. Stir the sauce mixture into the onion mixture in the saucepan.
  5. Simmer the sauce for 20 minutes, stirring frequently to prevent sticking.
  6. Use the sauce to baste meats during the last 15 minutes of cooking for optimal flavor.
