Ingredients

  • 0.5 Whole green bell pepper
  • 0.5 Whole red bell pepper
  • 2 Whole jalapeno peppers
  • 2 Whole serrano peppers
  • 2 Tablespoons (tbsp) olive oil
  • 0.75 Large white onion, sliced
  • 0.5 Large fresh tomato, minced
  • 3 Whole garlic cloves, minced
  • 0.25 Cups cilantro leaves, torn
  • 1 12 Ounces (oz) can diced tomatoes, with juice
  • 2 Tablespoons (tbsp) lime juice
  • 0.5 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) black pepper, ground
  • 3 Fluid Ounces (fl oz) Mexican beer

Steps

  1. Preheat the oven to broil and line a baking sheet with foil.
  2. Halve the green bell pepper, red bell pepper, jalapeno peppers, and serrano peppers lengthwise, discarding stems and seeds. Place them on the baking sheet and brush with olive oil.
  3. Roast the peppers under the broiler until the skin blackens and blisters, about 3 to 5 minutes.
  4. Transfer the roasted peppers to a bowl and cover with plastic wrap. Allow them to steam until the skins loosen, approximately 10 minutes. Peel and discard the skins.
  5. In a blender, combine the peeled peppers, onion, tomato, garlic, cilantro, diced tomatoes with juice, lime juice, salt, black pepper, and beer. Blend to your desired consistency.
  6. Transfer the salsa to a bowl and refrigerate for 30 minutes before serving to allow the flavors to meld.
