- 0.5 Whole green bell pepper
- 0.5 Whole red bell pepper
- 2 Whole jalapeno peppers
- 2 Whole serrano peppers
- 2 Tablespoons (tbsp) olive oil
- 0.75 Large white onion, sliced
- 0.5 Large fresh tomato, minced
- 3 Whole garlic cloves, minced
- 0.25 Cups cilantro leaves, torn
- 1 12 Ounces (oz) can diced tomatoes, with juice
- 2 Tablespoons (tbsp) lime juice
- 0.5 Teaspoon (tsp) salt
- 0.5 Teaspoon (tsp) black pepper, ground
- 3 Fluid Ounces (fl oz) Mexican beer
Steps
- Preheat the oven to broil and line a baking sheet with foil.
- Halve the green bell pepper, red bell pepper, jalapeno peppers, and serrano peppers lengthwise, discarding stems and seeds. Place them on the baking sheet and brush with olive oil.
- Roast the peppers under the broiler until the skin blackens and blisters, about 3 to 5 minutes.
- Transfer the roasted peppers to a bowl and cover with plastic wrap. Allow them to steam until the skins loosen, approximately 10 minutes. Peel and discard the skins.
- In a blender, combine the peeled peppers, onion, tomato, garlic, cilantro, diced tomatoes with juice, lime juice, salt, black pepper, and beer. Blend to your desired consistency.
