Steps

  1. Place the oven rack on the highest level and preheat the oven to 375 degrees F (190 degrees C). Set the prebaked tart shell on a baking sheet.
  2. Finely mince the clams and reserve 0.5 cups of the liquid. Whisk the eggs well, then add the clam liquid, cream, nutmeg, salt, and pepper. Whisk until smooth and stir in the clams.
  3. Fry the bacon over moderate heat until crisp. Remove from the pan and set aside. Leave about 0.5 tablespoons of bacon grease in the pan, add the onion, and cook until softened and translucent, about 5 minutes.
