Ingredients
- 2 Quarts (qt) water
- 2 Pounds (lb) fresh green beans, drained
- 1 Teaspoon (tsp) salt
- 2 Teaspoons (tsp) mustard seed
- 2 Teaspoons (tsp) dried dill weed
- 1 Teaspoon (tsp) red pepper flakes
- 1 Teaspoon (tsp) dill seed
- 4 Cloves garlic, minced
- 2 Cups (c) distilled white vinegar
- 0.67 Cups (c) white sugar
- 2 Cups (c) water
- 1 Pinch salt, to taste
Steps
- Bring 2 quarts of water to a boil. Add the green beans and boil for 5 minutes or until they are just tender. Plunge the beans into cold water to set their color, then drain well.
- In a large bowl, combine the salt, mustard seed, dill weed, red pepper flakes, dill seed, and minced garlic. Mix well. Add the cooled beans to the bowl and stir to coat them with the spice mixture.
- In a small saucepan, bring 2 cups of water, vinegar, sugar, and additional salt (to taste) to a boil. Pour this mixture over the beans and spices. Mix thoroughly to ensure the beans are well-coated.
