  • 2 Slices bacon, drained
  • 24 Medium oysters
  • 1.5 Cups spinach, cooked
  • 0.33 Cups bread crumbs
  • 0.25 Cups green onions, minced
  • 1 Tablespoon parsley, minced
  • 0.5 Teaspoons (tsp) salt
  • 1 Pinch hot pepper sauce, to taste
  • 3 Tablespoons extra virgin olive oil
  • 1 Teaspoon anise flavored liqueur
  • 4 Cups kosher salt

Steps

  1. Preheat the oven to 450 degrees F (220 degrees C). Cook the bacon in a large, deep skillet over medium-high heat until evenly browned. Drain, crumble, and set aside.
  2. Clean the oysters and place them in a large stockpot. Add enough water to cover the oysters and bring to a boil. Remove from heat, drain, and cool the oysters. Once cooled, remove the top shell of each oyster.
  3. In a food processor, chop the bacon, spinach, bread crumbs, green onions, and parsley. Add the salt, hot sauce, olive oil, and anise-flavored liqueur. Process until finely chopped but not pureed, about 10 seconds.
  4. Arrange the oysters in their half shells on a pan filled with kosher salt. Spoon some of the spinach mixture onto each oyster.
  5. Bake for 10 minutes until cooked through. Change the oven setting to broil and broil until the tops are browned. Serve hot.
