Ingredients

  • 1 Tablespoon (tbsp) vegetable oil
  • 2 Pounds (lb) ground pork
  • 1.5 Cups beef stock
  • 3 Small onions, minced
  • 2 Cups fresh mushrooms, sliced
  • 3 Cloves garlic, minced
  • 1 Cup celery, sliced
  • 1 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) cinnamon, ground
  • 0.5 Teaspoon (tsp) black pepper, ground
  • 0.5 Teaspoon (tsp) savory, dried
  • 0.25 Teaspoon (tsp) cloves, ground
  • 1 Cup bread crumbs, fresh
  • 0.5 Cup parsley, chopped
  • 1 Quantity pastry for a 9-inch double crust pie
  • 1 Whole egg
  • 1 Teaspoon (tsp) water

Steps

  1. In a large skillet, heat the vegetable oil over medium-high heat. Cook the ground pork, breaking it up with a spoon, for about 10 minutes or until no longer pink. Drain the fat.
  2. Stir in the beef stock, onions, garlic, mushrooms, celery, salt, cinnamon, black pepper, savory, and cloves. Bring to a boil, then reduce the heat to medium-low. Simmer for 35 to 45 minutes, or until only 2 tablespoons of liquid remain. Stir in the fresh bread crumbs and parsley. Taste and adjust the seasoning as needed. Cover and refrigerate until cold. The filling can be stored for up to one day.
  3. Preheat the oven to 375 degrees F (190 degrees C).
  4. Roll out the pastry to about 1/8 inch thickness and fit it into a pie plate. Spoon the filling into the shell. Roll out the top pastry. Moisten the rim of the pie shell with water. Cover with the top pastry, pressing the edges together to seal. Trim and flute the pastry edge. Beat the egg with water and brush over the top pastry. Cut steam vents in the top.
  5. Bake in the preheated oven until the pastry is golden brown, about 45 minutes. Allow to cool for about 10 minutes before serving.
