Ingredients

  • 8 Whole ripe plum tomatoes, peeled
  • 1 Tablespoon (tbsp) vegetable oil
  • 4 Whole poblano peppers, peeled
  • 4 Whole Anaheim chile peppers, peeled
  • 1 Whole jalapeno chile pepper, peeled
  • 1 Large green bell pepper, peeled
  • 2 Tablespoons (tbsp) cilantro leaves, minced
  • 2 Tablespoons (tbsp) white vinegar
  • 0.25 Whole onion, minced
  • 2 Whole garlic cloves, minced
  • 2 Teaspoons (tsp) salt
  • 0.25 Teaspoon (tsp) mesquite flavored liquid smoke concentrate

Steps

  1. Preheat an outdoor grill to medium heat.
  2. Rub the tomatoes with vegetable oil and place them on the grill. Grill for 10 minutes, turning occasionally.
  3. Add the poblano, Anaheim, jalapeno chiles, and green bell pepper to the grill. Grill each side for 5 to 7 minutes, ensuring the skins blister and brown without burning.
  4. Remove the tomatoes and place them in a separate bowl. Transfer the grilled chiles and pepper to an airtight container to steam and cool, making them easier to peel.
  5. Once cooled, peel the tomatoes and drain any excess liquid. Peel and seed the peppers.
  6. In a food processor, combine the tomatoes, chiles, green pepper, cilantro, vinegar, onion, garlic, and salt. Pulse 4 or 5 times.
  7. Add the liquid smoke and additional jalapenos if desired. Pulse until the salsa reaches your preferred consistency, whether chunky or smooth.
  8. Serve fresh or store in the refrigerator for later use. Enjoy your smoky grilled pepper salsa with chips or as a topping for your favorite dishes!
