- 8 Whole ripe plum tomatoes, peeled
- 1 Tablespoon (tbsp) vegetable oil
- 4 Whole poblano peppers, peeled
- 4 Whole Anaheim chile peppers, peeled
- 1 Whole jalapeno chile pepper, peeled
- 1 Large green bell pepper, peeled
- 2 Tablespoons (tbsp) cilantro leaves, minced
- 2 Tablespoons (tbsp) white vinegar
- 0.25 Whole onion, minced
- 2 Whole garlic cloves, minced
- 2 Teaspoons (tsp) salt
- 0.25 Teaspoon (tsp) mesquite flavored liquid smoke concentrate
Steps
- Preheat an outdoor grill to medium heat.
- Rub the tomatoes with vegetable oil and place them on the grill. Grill for 10 minutes, turning occasionally.
- Add the poblano, Anaheim, jalapeno chiles, and green bell pepper to the grill. Grill each side for 5 to 7 minutes, ensuring the skins blister and brown without burning.
- Remove the tomatoes and place them in a separate bowl. Transfer the grilled chiles and pepper to an airtight container to steam and cool, making them easier to peel.
- Once cooled, peel the tomatoes and drain any excess liquid. Peel and seed the peppers.
- In a food processor, combine the tomatoes, chiles, green pepper, cilantro, vinegar, onion, garlic, and salt. Pulse 4 or 5 times.
