  • 2 8.5 Ounces (oz) boxes corn muffin mix, packaged
  • 0.67 Cups milk
  • 2 Large eggs
  • 0.25 Cups sour cream
  • 0.5 Cups creamed corn
  • 0.25 Cups pickled jalapeno peppers, minced
  • 4 Ounces (oz) Cheddar cheese, grated
  • 1 Small fresh jalapeno pepper, sliced
  • 1 Pinch butter, melted (optional, for serving)

Steps

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease 12 standard muffin cups or line with paper liners.
  2. In a large bowl, combine the corn muffin mix, milk, eggs, sour cream, creamed corn, pickled jalapenos, and grated Cheddar cheese. Stir until well combined.
  3. Divide the mixture evenly among the prepared muffin cups. Place a slice of fresh jalapeno on top of each muffin if desired.
  4. Bake in the preheated oven for 17 to 20 minutes, or until the muffins are browned around the edges and the centers spring back lightly when touched.
  5. Once out of the oven, lightly press down the center of each muffin to flatten the top slightly.
  6. Serve warm, topped with melted butter if desired. Enjoy!
