Ingredients

  • 0.25 Cup fresh lemon juice
  • 3 Tablespoons (tbsp) tahini paste
  • 4 Whole garlic cloves, minced
  • 1 Teaspoon (tsp) salt
  • 2 15.5 Ounces (oz) garbanzo beans, drained
  • 0.5 Cup olive oil
  • 0.5 Cup oil-packed sun-dried tomatoes, drained
  • 0.25 Cup fresh basil, shredded
  • 2 Tablespoons (tbsp) olive oil
  • 0.125 Teaspoon (tsp) paprika

Steps

  1. Place the lemon juice, tahini, minced garlic, and salt into a food processor. Process until smooth.
  2. Add the drained garbanzo beans and 0.5 cups of olive oil to the processor. Process until smooth, scraping the sides of the bowl occasionally.
  3. Add the drained sun-dried tomatoes to the mixture. Pulse until they are chopped into very small pieces and well incorporated into the hummus.
  4. Add the shredded basil and pulse about 3 times until mixed in.
  5. Transfer the hummus to a shallow serving dish and create a few decorative grooves on top.
  6. Refrigerate the hummus for at least 1 hour.
  7. Before serving, drizzle with 2 tablespoons of olive oil and sprinkle with paprika if desired.
