Ingredients
- 0.25 Cup fresh lemon juice
- 3 Tablespoons (tbsp) tahini paste
- 4 Whole garlic cloves, minced
- 1 Teaspoon (tsp) salt
- 2 15.5 Ounces (oz) garbanzo beans, drained
- 0.5 Cup olive oil
- 0.5 Cup oil-packed sun-dried tomatoes, drained
- 0.25 Cup fresh basil, shredded
- 2 Tablespoons (tbsp) olive oil
- 0.125 Teaspoon (tsp) paprika
Steps
- Place the lemon juice, tahini, minced garlic, and salt into a food processor. Process until smooth.
- Add the drained garbanzo beans and 0.5 cups of olive oil to the processor. Process until smooth, scraping the sides of the bowl occasionally.
- Add the drained sun-dried tomatoes to the mixture. Pulse until they are chopped into very small pieces and well incorporated into the hummus.
- Add the shredded basil and pulse about 3 times until mixed in.
- Transfer the hummus to a shallow serving dish and create a few decorative grooves on top.
- Refrigerate the hummus for at least 1 hour.
- Before serving, drizzle with 2 tablespoons of olive oil and sprinkle with paprika if desired.
