Ingredients

  • 1 Pound (lb) bay scallops
  • 8 Whole limes, juiced
  • 2 Stalks celery, sliced
  • 2 Whole tomatoes, minced
  • 0.5 Whole green bell pepper, minced
  • 5 Whole green onions, minced
  • 0.5 Cups fresh parsley, divided
  • 0.125 Cups fresh cilantro, divided
  • 1.5 Tablespoons (tbsp) olive oil
  • 1 Pinch black pepper, ground

Steps

  1. Rinse the bay scallops thoroughly and place them in a medium bowl.
  2. Pour the lime juice over the scallops, ensuring they are completely immersed. Cover the bowl and refrigerate until the scallops turn opaque, about 8 hours to overnight.
  3. After marinating, discard half of the lime juice from the bowl.
  4. Add the sliced celery, minced tomatoes, minced bell pepper, minced green onions, divided parsley, divided cilantro, olive oil, and ground black pepper to the scallops.
  5. Stir the mixture gently until all ingredients are well combined.
  6. Serve the ceviche in glasses with a lime slice on the rim for an elegant presentation.
