- 1 Pound sweet potatoes, peeled
- 0.25 Cup butter, melted
- 1 14 Ounces can sweetened condensed milk
- 1 Teaspoon ground cinnamon
- 1 Teaspoon orange zest, zested
- 1 Teaspoon vanilla extract
- 0.5 Teaspoon ground nutmeg
- 0.25 Teaspoon salt
- 2 Whole eggs
- 1 Recipe pastry for a 9-inch single crust pie, packaged
- 2 Tablespoons dark corn syrup
- 2 Tablespoons brown sugar, packed
- 1 Tablespoon butter, melted
- 0.5 Teaspoon maple flavored extract
- 1 Cup pecans, chopped
Steps
- Boil the sweet potatoes whole in their skins for 40 to 50 minutes until tender. Run cold water over them and remove the skins if needed. Break apart the sweet potatoes in a large bowl.
- Melt 0.25 cup of butter and pour it over the sweet potatoes. Beat with an electric mixer until smooth. Blend in the sweetened condensed milk, cinnamon, orange zest, vanilla, nutmeg, salt, and 1 egg. Pour the mixture into the unbaked pie crust.
- Preheat the oven to 425°F (220°C). Bake the pie for 20 minutes. Remove from the oven and reduce the temperature to 350°F (175°C).
