Ingredients
- 18 Oreo chocolate sandwich cookies
- 2 Tablespoons (tbsp) unsalted butter, melted
- 3 8 Ounces (oz) packages cream cheese, packaged
- 0.75 Cups white sugar
- 1 Teaspoon (tsp) vanilla extract
- 8 1 Ounce (oz) squares semisweet baking chocolate, melted
- 3 Large eggs
Steps
- Preheat the oven to 325°F (165°C) if using a silver 9-inch springform pan, or to 300°F (150°C) if using a dark nonstick 9-inch springform pan.
- Combine the finely crushed Oreo cookies and melted butter in a bowl. Mix until evenly moistened, then press firmly into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the packaged cream cheese, sugar, and vanilla extract with an electric mixer on medium speed until well blended.
- Add the melted chocolate to the cream cheese mixture and beat well.
- Add the eggs, one at a time, beating on low speed after each addition just until blended. Pour the mixture over the prepared crust.
- Bake in the preheated oven for 55 to 60 minutes, or until the center is almost set.
- Run the tip of a knife or metal spatula around the edges of the pan to loosen the cake. Allow it to cool before removing the sides of the pan.
- Refrigerate the cheesecake for at least 4 hours or overnight. Store any leftover cheesecake in the refrigerator.

Tip: For an extra touch, dust the cooled cheesecake with cocoa powder using a wire mesh strainer. For a festive garnish, create a heart-shaped design by topping the dusted cheesecake with a heart-shaped stencil and sprinkling with confectioners' sugar.
