Ingredients
- 1 - 0.25 Ounces (oz) package unflavored gelatin
- 0.5 - Cup cold water
- 0.67 - Cup white sugar
- 1 - Cup strawberries, mashed
- 3 - Whole egg whites
- 0.25 - Teaspoon (tsp) cream of tartar
- 0.33 - Cup white sugar
- 0.5 - Cup heavy whipping cream
- 1 - 9 Inch pie crust, baked
Steps
- Sprinkle the gelatin over the cold water and set aside to soften for 5 minutes.
- In a saucepan, combine 0.67 cups of sugar, the rehydrated gelatin, and the mashed strawberries. Cook to a full rolling boil, stirring constantly. Remove from heat and set the pan in cold water; cool until the mixture mounds slightly when dropped from a spoon.
- In a heat-proof mixing bowl, combine the egg whites, cream of tartar, and 0.33 cups of sugar. Whisk slightly to break up the egg whites. Set the bowl over a pot of simmering water. Heat, whisking constantly, until the mixture is hot to the touch and reaches 145°F (63°C). Remove from heat and whip with an electric mixer until medium-stiff glossy peaks form.
- Fold the fruit mixture into the meringue using a whisk or spatula. Meanwhile, whip the cream in a cold bowl until medium-stiff peaks form.
- Ensure the filling mixture is no warmer than room temperature before adding the whipped cream. Mix one-third of the whipped cream into the filling mixture gently until combined. Fold in the remaining whipped cream and pile the filling into the cooled baked pie shell. Chill for several hours until set.
