Ingredients

  • 2 Cups mashed potatoes, mashed
  • 1 Large egg, whisked
  • 0.5 Cups all-purpose flour, sifted
  • 1 Pinch salt, to taste
  • 1 Pinch garlic salt, to taste
  • 1 Tablespoon (tbsp) butter, melted
  • 1 Cup Cheddar cheese, shredded

Steps

  1. In a medium-sized mixing bowl, combine the mashed potatoes, whisked egg, sifted flour, salt, and garlic salt. Mix well until all ingredients are fully incorporated.
  2. Melt the butter in a large frying pan over low heat.
  3. Drop pancake-sized (4-inch circles) lumps of the potato mixture into the frying pan. Pat them to flatten to a thickness of 1/2 to 1 inch.
  4. Sprinkle some shredded Cheddar cheese onto each potato cake.
  5. Spoon more potato mixture over the cheese to cover it completely.
  6. Cook until the bottom of the potato cake is browned, about 10 minutes.
  7. Carefully flip the potato cake over and brown the other side, about another 10 minutes.
  8. Serve hot and enjoy the cheesy surprise inside!
