Ingredients

  • 4 Ounces (oz) cream cheese, softened
  • 0.5 Cups fresh cilantro leaves, torn
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 3 Tablespoons (tbsp) butter, divided
  • 8 Large eggs, beaten

Steps

  1. Mix together the softened cream cheese and cilantro in a bowl. Season with salt and pepper to taste.
  2. Heat 1/4 of the butter in a well-seasoned omelet pan or an 8-inch nonstick frying pan over medium-high heat. When the butter is hot and bubbling, swirl it around in the pan.
  3. Just before the butter begins to brown, pour in beaten eggs and reduce heat.
  4. After about 10 seconds, the omelet will begin to coagulate. Push the omelet to one side of the pan with a spoon or spatula to allow the raw egg to flow onto the cleared skillet. Repeat this process once more, then remove the skillet from the heat.
  5. Dab 1/4 of the herbed cream cheese in a line along the middle of the omelet. If the omelet has not completely set, place the pan over medium heat for 30 more seconds.
  6. Slide the omelet from the pan onto a plate, allowing it to roll up and enclose the herbed cream cheese filling.
  7. Repeat the process to make 3 more omelets. Serve immediately.
