Ingredients

  • 29 Ounces (oz) can pumpkin puree, pureed
  • 1.5 Cups white sugar
  • 0.75 Cups apple juice
  • 2 Teaspoons (tsp) ginger, ground
  • 2 Teaspoons (tsp) cinnamon, ground
  • 1 Teaspoon (tsp) nutmeg, ground
  • 0.5 Teaspoon (tsp) cloves, ground

Steps

  1. Inspect five 1/2-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until pumpkin butter is ready. Wash new, unused lids and rings in warm soapy water.
  2. In a large saucepan, combine pumpkin puree, sugar, apple juice, ginger, cinnamon, nutmeg, and cloves. Stir over medium heat until well combined and bring to a boil.
  3. Reduce the heat and simmer, stirring frequently, until the mixture thickens, about 30 minutes.
  4. Pack the pumpkin butter into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  5. Allow the jars to cool to room temperature, then chill in the refrigerator.
