Ingredients

  • 1 Cup butter, softened
  • 1 Cup white sugar
  • 4 Large eggs
  • 0.25 Cup milk
  • 1.25 Cups all-purpose flour
  • 6 Tablespoons (tbsp) unsweetened cocoa powder
  • 1 Teaspoon (tsp) baking soda
  • 12 Ounces (oz) jar black cherry jam
  • 1 Pint heavy whipping cream
  • 2 Tablespoons (tbsp) sucralose sweetener
  • 1 Teaspoon (tsp) vanilla extract
  • 6 Ounces (oz) jar maraschino cherries
  • 0.5 Cup milk chocolate, grated

Steps

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  3. Mix in the milk, then gradually add the flour, cocoa powder, and baking soda, mixing until just combined.
  4. Fill each cupcake liner halfway with the batter. Add a teaspoon of black cherry jam to the center of each, then cover with more batter until the liners are three-quarters full.
  5. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely on a wire rack.
  6. For the topping, whip the heavy cream with the sucralose sweetener and vanilla extract until stiff peaks form.
  7. Pipe or spread the whipped cream over the cooled cupcakes. Garnish with a maraschino cherry and a sprinkle of grated milk chocolate.
