Ingredients
- 1.5 Cups graham cracker crumbs
- 0.25 Cups butter, melted
- 2 Tablespoons brown sugar, packed
- 4 8 Ounces (oz) packages cream cheese, packed
- 1 Cup brown sugar, packed
- 1 Teaspoon (tsp) vanilla extract
- 1 Cup sour cream
- 4 Whole eggs
- 4 Cups apples, peeled
- 0.5 Cups brown sugar, packed
- 0.75 Cups pecans, chopped
- 1 Teaspoon (tsp) cinnamon, ground
Steps
- Preheat the oven to 325 degrees F (165 degrees C). Line a 9x13 inch baking dish with aluminum foil, extending the foil sheets over the sides of the dish.
- To make the crust, mix the graham cracker crumbs, melted butter, and 2 tablespoons of brown sugar in a bowl until evenly blended. Press the mixture evenly over the bottom of the prepared baking dish.
- For the filling, beat the cream cheese, 1 cup of brown sugar, and vanilla extract together in a mixing bowl until smooth. Beat in the sour cream. On low speed, add the eggs one at a time, mixing just until blended. Pour the filling over the crust.
- To prepare the topping, place the chopped apples in a bowl and toss with 0.5 cups of brown sugar, chopped pecans, and cinnamon until evenly coated.
- Bake in the preheated oven until the center is almost set, about 55 minutes. Allow to cool, then refrigerate for at least 4 hours or overnight.
- Before serving, let the cheesecake sit at room temperature for 30 minutes. Use the extended aluminum foil to lift the cheesecake from the baking dish and place it on a cutting board or serving plate. Remove the foil and cut into 16 squares. Enjoy your Cinnamon Apple-Pecan Cheesecake Delight!
