Ingredients

  • 1 Cup basmati rice
  • 4 Cups coconut milk
  • 0.5 Cup sugar
  • 0.5 Teaspoon (tsp) cardamom, ground
  • 0.5 Cup raisins
  • 0.5 Cup almonds, toasted
  • 0.5 Cup pistachios, toasted

Steps

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large saucepan, combine the rice and coconut milk. Bring to a boil over medium heat.
  3. Reduce the heat to low and simmer, stirring occasionally, until the rice is tender and the mixture thickens, about 30 minutes.
  4. Stir in the sugar and cardamom, and continue to cook for another 5 minutes.
  5. Add the raisins and cook for an additional 5 minutes, stirring frequently.
  6. Remove from heat and let the kheer cool slightly.
  7. Serve warm or chilled, garnished with toasted almonds and pistachios.
