Ingredients

  • 6 Whole eggs
  • 2.5 Cups (c) white sugar
  • 0.5 Cups (c) vegetable oil
  • 0.5 Cups (c) butter, melted
  • 1 Teaspoon (tsp) anise oil, or more to taste
  • 5 Cups (c) all-purpose flour
  • 3 Teaspoons (tsp) baking powder
  • 1 Teaspoon (tsp) salt

Steps

  1. In a stand mixer fitted with a paddle attachment, combine eggs, sugar, vegetable oil, butter, and anise oil. Beat until creamy and well combined.
  2. Mix in 1 cup of flour, baking powder, and salt until combined.
  3. Gradually add the remaining flour, 1 cup at a time, mixing on low speed until the mixture resembles a thick pancake batter.
  4. Preheat a pizzelle cooking iron according to the manufacturer's instructions.
  5. Drop a teaspoon of dough onto each plate of the cooking iron and close the lid.
  6. Cook until steaming slows, approximately 10 to 20 seconds.
  7. Repeat with the remaining batches of batter.

Cook's Notes

For a flavor alternative, try Lemon-Poppy Seed: omit anise oil; instead, add 1 to 2 teaspoons lemon oil (or extract), zest from 1 lemon, and 1 tablespoon poppy seeds.

Pizzelles freeze well. Place into stacks of a dozen, then place 2 dozen into a gallon-sized plastic zip-top bag. Be cautious as cookies are fragile and may break if crushed.
