Ingredients
- 1 12 Ounces (oz) bag mixed frozen berries
- 0.25 Cups cream sherry
- 1 Teaspoon (tsp) fresh lemon juice
- 1 Teaspoon (tsp) lemon zest, zested
- 2 Cups heavy cream, chilled
- 1 Tablespoon (tbsp) white sugar
- 1 12 Ounces (oz) loaf pound cake, packaged
- 0.5 Cups coconut, toasted
Steps
- In a bowl, combine the mixed berries, cream sherry, lemon juice, and lemon zest. Toss to blend and set aside.
- In a large bowl, beat the chilled heavy cream until soft peaks form. Gradually add the sugar and continue beating until stiff peaks form. Refrigerate the whipped cream until needed.
- Slice the pound cake into 1/3 inch wide slices, discarding the ends.
- To assemble the trifle, place a layer of cake slices at the bottom of a glass serving bowl. Spoon half of the berry mixture with its juice over the cake slices.
- Cover the berry layer with half of the whipped cream and sprinkle with half of the toasted coconut.
- Repeat the layering process with the remaining cake slices, berry mixture, whipped cream, and coconut.
- Refrigerate the assembled trifle for at least 1 hour before serving to allow the flavors to meld.
