  • 0.33 Cup apricot preserves
  • 0.33 Cup fruity white wine, such as Gewurztraminer
  • 0.5 Teaspoon (tsp) ginger, ground
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 2 Tablespoons (tbsp) olive oil
  • 4 Boneless pork chops

Steps

  1. In a small bowl, mix together the apricot preserves, white wine, and ground ginger; set aside.
  2. Season the pork chops with salt and pepper.
  3. Heat the olive oil in a skillet over medium-high heat.
  4. Add the pork chops to the skillet and cook until browned on each side and no longer pink in the center, about 4 minutes per side. Remove the chops from the skillet.
  5. Reduce the heat to medium-low. Using the same skillet, pour in the apricot preserves mixture and simmer until thickened, about 4 minutes.
  6. Return the pork chops to the skillet, turning to coat each side in the sauce; cook for an additional 1 minute.
  7. Serve the pork chops hot, with the apricot glaze drizzled over the top. Enjoy!
