Ingredients
- 3 Tablespoons (tbsp) butter
- 3 Tablespoons (tbsp) all-purpose flour
- 1 Tablespoon (tbsp) vegetable oil
- 1 Large onion, minced
- 1 Tablespoon (tbsp) garlic, minced
- 1 Large celery stalk, minced
- 1 Pinch Cajun seasoning, to taste
- 1 Cup chicken broth
- 1.5 Cups frozen corn kernels
- 1 Whole bay leaf
- 2 Cups milk
- 2 Cups heavy cream
- 1 Teaspoon (tsp) liquid shrimp and crab boil seasoning
- 1 Pound (lb) fresh lump crabmeat
- 0.25 Cups green onions, minced
- 0.5 Teaspoon (tsp) Worcestershire sauce
- 1 Pinch salt, to taste
- 1 Pinch black pepper, to taste
- Additional green onions, minced for garnish
Steps
- Melt the butter in a small saucepan over medium heat. Gradually whisk in the flour and cook for 5 to 7 minutes, whisking constantly, until a golden roux forms. Set aside.
- Heat the vegetable oil in a Dutch oven over medium heat. Add the minced onion, minced garlic, and minced celery. Cook for 1 minute.
- Add Cajun seasoning to taste, then stir in the chicken broth, corn kernels, and bay leaf. Bring to a simmer.
- Pour in the milk, heavy cream, and liquid shrimp and crab boil seasoning. When the mixture begins to simmer, reduce the heat to low and simmer for 7 minutes.
- Stir in the prepared roux, 1 tablespoon at a time, blending thoroughly. Continue to cook on low heat, whisking until the mixture thickens.
- Stir in the fresh lump crabmeat, minced green onions, and Worcestershire sauce. Simmer for an additional 6 to 8 minutes.
- Season with salt and black pepper to taste.
