Ingredients

  • 2 Cups water
  • 2 Cups red potatoes, peeled
  • 3 Tablespoons butter, melted
  • 1 Small onion, minced
  • 3 Tablespoons all-purpose flour
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 3 Cups milk
  • 0.5 Teaspoons white sugar
  • 1 Cup Cheddar cheese, shredded
  • 1 Cup ham, diced

Steps

  1. In a medium-sized stock pot, bring the water to a boil. Add the red potatoes and cook until tender. Drain the potatoes, reserving 1 cup of the cooking liquid.
  2. In the same pot, stir in the melted butter and minced onion. Cook until the onion is soft.
  3. Add the all-purpose flour to the pot, stirring to combine. Season with salt and pepper.
  4. Gradually stir in the cooked potatoes, reserved liquid, milk, white sugar, shredded Cheddar cheese, and diced ham.
  5. Simmer the mixture for 30 minutes, stirring frequently to ensure the cheese melts evenly and the soup thickens.
  6. Serve hot, garnished with additional cheese or herbs if desired.
