Ingredients

  • 2 Tablespoons (tbsp) distilled white vinegar
  • 2 Tablespoons (tbsp) fresh lime juice
  • 2 Teaspoons (tsp) lime zest, zested
  • 2 Cloves garlic, minced
  • 1.5 Teaspoons (tsp) honey
  • 1 Teaspoon (tsp) seafood seasoning
  • 1 Teaspoon (tsp) hot pepper sauce
  • 0.5 Teaspoons (tsp) cumin
  • 0.5 Teaspoons (tsp) chili powder
  • 0.5 Teaspoons (tsp) ground black pepper
  • 1 Pound (lb) tilapia fillets, divided
  • 8 Ounces (oz) light sour cream
  • 0.5 Cups (cup) adobo sauce from chipotle peppers
  • 2 Tablespoons (tbsp) fresh lime juice
  • 2 Teaspoons (tsp) lime zest, zested
  • 0.5 Teaspoons (tsp) seafood seasoning
  • 0.25 Teaspoons (tsp) cumin
  • 0.25 Teaspoons (tsp) chili powder
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 10 Ounces (oz) package tortillas, packaged
  • 3 Ripe tomatoes, diced
  • 1 Small head cabbage, shredded
  • 1 Bunch cilantro, torn
  • 2 Limes, sliced

Steps

  1. Prepare the Marinade: In a bowl, whisk together olive oil, vinegar, lime juice, lime zest, garlic, honey, seafood seasoning, hot pepper sauce, cumin, chili powder, and black pepper. Place tilapia chunks in a shallow dish, pour the marinade over, cover with plastic wrap, and refrigerate for 6 to 8 hours.
  2. Make the Dressing: Combine sour cream and adobo sauce in a bowl. Stir in lime juice, lime zest, seafood seasoning, cumin, and chili powder. Season with salt and pepper to taste. Cover and refrigerate until needed.
  3. Preheat the Grill: Set an outdoor grill to high heat and lightly oil the grate. Position the grate 4 inches from the heat source.
  4. Grill the Fish: Remove fish from the marinade, drain excess, and discard the marinade. Grill fish pieces until they flake easily with a fork, turning once, about 9 minutes.
  5. Assemble the Tacos: Place grilled fish in the center of tortillas. Add desired amounts of tomatoes, cabbage, and cilantro. Drizzle with the prepared dressing.
