Steps

  1. Thaw the turkey in the refrigerator for 5 days.
  2. Pat the turkey dry and remove giblets. Spatchcock the turkey.
  3. Mix salt, sugar, and orange zest for the instant cure. Sprinkle over the turkey and refrigerate for at least 1 hour.
  4. Bring the turkey to room temperature for about 1 hour.
  5. Preheat a smoker to 300-325°F (160-165°C).
  6. Mix ingredients for the rub and apply to the turkey.
