- 1.5 Cups butter (3 sticks), melted
- 3 Whole bay leaves
- 10 Sprigs fresh thyme
Steps
- Thaw the turkey in the refrigerator for 5 days.
- Pat the turkey dry and remove giblets. Spatchcock the turkey.
- Mix salt, sugar, and orange zest for the instant cure. Sprinkle over the turkey and refrigerate for at least 1 hour.
- Bring the turkey to room temperature for about 1 hour.
- Preheat a smoker to 300-325°F (160-165°C).
