- 2 Tablespoons kosher salt
- 5 Stalks celery
- 1 Whole onion, sliced
- 0.5 Teaspoon black pepper, ground

- 0.25 Cups fresh parsley, torn
- 11 Cloves garlic, peeled
- 1 Cup barley
Steps
- Place beef bones in a large slow cooker. Add kosher salt, celery stalks, sliced onion, bouquet garni spice balls, ground black pepper, baby carrots, fresh torn parsley, and peeled garlic cloves.
- Fill the slow cooker with hot water, leaving about 2 inches from the top. Cover and cook on high heat for 6 hours, stirring occasionally.
- After 6 hours, add the barley to the slow cooker. Continue cooking for an additional 2 hours, stirring occasionally, until the meat can easily be removed from the bones.
- Remove and discard the sliced onion, bouquet garni, celery, and fresh torn parsley from the soup.
- Transfer the bones to a dish and carefully remove the meat, avoiding cartilage or gristle. Return the meat to the soup, stir well, and serve hot.
