Ingredients

  • 4 Slices bacon, divided
  • 1 Cup onion, minced
  • 4 Cloves garlic, minced
  • 0.33 Pounds ground beef
  • 1 Cup celery, minced
  • 1 Cup carrots, sliced
  • 2 Cups tomato puree
  • 2 14.5 Ounces (oz) stewed tomatoes
  • 1 14 Ounces (oz) beef broth
  • 1 10.5 Ounces (oz) condensed French onion soup
  • 5 Cups water
  • 0.25 Cups red wine
  • 1 Teaspoon (tsp) oregano, dried
  • 1 Teaspoon (tsp) basil, dried
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 1 Cup zucchini, minced
  • 2 Cups spinach, sliced
  • 1 Cup spinach pasta
  • 1 15 Ounces (oz) garbanzo beans, drained
  • 0.25 Cups parsley, minced

Steps

  1. In a large stock pot, cook the bacon until crispy, then drain off the fat.
  2. Add the minced onion, minced garlic, and ground beef to the pot. Cook until the onions are translucent and the beef is browned.
  3. Stir in the minced celery, sliced carrots, tomato puree, stewed tomatoes, beef broth, condensed French onion soup, water, red wine, oregano, basil, salt, and pepper. Cook for 15 minutes.
  4. Add the minced zucchini, sliced spinach, spinach pasta, drained garbanzo beans, and minced parsley to the pot.
  5. Cook for an additional 15 minutes, or until the pasta is tender.
  6. Serve hot with a generous sprinkle of freshly grated Parmesan cheese. Enjoy!
