- 4 Slices bacon, divided
- 1 Cup onion, minced
- 4 Cloves garlic, minced
- 0.33 Pounds ground beef
- 1 Cup celery, minced
- 1 Cup carrots, sliced
- 2 Cups tomato puree
- 2 14.5 Ounces (oz) stewed tomatoes
- 1 14 Ounces (oz) beef broth
- 1 10.5 Ounces (oz) condensed French onion soup
- 5 Cups water
- 0.25 Cups red wine
- 1 Teaspoon (tsp) oregano, dried
- 1 Teaspoon (tsp) basil, dried
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 1 Cup zucchini, minced
- 2 Cups spinach, sliced
- 1 Cup spinach pasta
- 1 15 Ounces (oz) garbanzo beans, drained
- 0.25 Cups parsley, minced
Steps
- In a large stock pot, cook the bacon until crispy, then drain off the fat.
- Add the minced onion, minced garlic, and ground beef to the pot. Cook until the onions are translucent and the beef is browned.
- Stir in the minced celery, sliced carrots, tomato puree, stewed tomatoes, beef broth, condensed French onion soup, water, red wine, oregano, basil, salt, and pepper. Cook for 15 minutes.
- Add the minced zucchini, sliced spinach, spinach pasta, drained garbanzo beans, and minced parsley to the pot.
- Cook for an additional 15 minutes, or until the pasta is tender.
