- 2 Pounds (lb) beef chuck, divided
- 2 Tablespoons (tbsp) olive oil
- 1 Large onion, minced
- 2 Whole garlic cloves, minced
- 2 Tablespoons (tbsp) all-purpose flour
- 1 Teaspoon (tsp) salt
- 0.5 Teaspoon (tsp) black pepper
- 1 Cup Guinness beer
- 2 Cups beef broth
- 2 Tablespoons (tbsp) tomato paste
- 2 Whole carrots, sliced
- 2 Whole potatoes, peeled
- 1 Teaspoon (tsp) thyme
- 1 Whole bay leaf
Steps
- Heat olive oil in a large pot over medium heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
- In the same pot, add the minced onion and minced garlic. Sauté until the onion is translucent.
- Stir in the flour, salt, and black pepper, and cook for 1 minute.
- Gradually add the Guinness beer, scraping up any browned bits from the bottom of the pot.
- Return the beef to the pot and add the beef broth, tomato paste, carrots, potatoes, thyme, and bay leaf.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2.5 to 3 hours, or until the beef is tender.
- Remove the bay leaf before serving. Enjoy your Beef and Guinness Stew with mashed potatoes or crusty bread.
