Ingredients

  • 2 Tablespoons olive oil
  • 1 Pound mushrooms, sliced
  • 3 Stalks celery, minced
  • 2 Medium onions, minced
  • 20 Ounces loaf French bread, diced
  • 16 Ounces package herb-seasoned stuffing mix
  • 4 Large eggs, whisked
  • 28 Ounces cans chicken broth
  • 2 Teaspoons sage, ground
  • 2 Teaspoons thyme, ground
  • 2 Tablespoons garlic powder
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. Heat the olive oil in a large skillet over medium heat. Sauté the mushrooms, celery, and onions until softened.
  2. Dampen the fresh bread cubes (not the stuffing mix) with water, then squeeze out any excess moisture.
  3. In a large bowl, combine the sautéed mushroom mixture, bread cubes, stuffing mix, beaten eggs, and 1 can of chicken broth. Season with sage, thyme, garlic powder, salt, and pepper. Mix well until the stuffing reaches a paste-like consistency. Add more chicken broth if necessary.
  4. Loosely pack the stuffing inside the turkey cavity before roasting, or bake separately in a covered dish for a moist stuffing. Remove the cover for the last 20 minutes to crisp the top if desired.
