  • 1 Whole onion, minced
  • 0.5 Cups celery, minced
  • 0.25 Cups carrots, minced
  • 2 Whole garlic cloves, minced
  • 2 Tablespoons fresh parsley, minced
  • 5 Tablespoons margarine
  • 4 Tablespoons all-purpose flour
  • 1.5 Cups chicken broth
  • 1.5 Cups whole milk
  • 3 Whole potatoes, sliced
  • 2 Teaspoons Worcestershire sauce
  • 1.5 Teaspoons mustard powder
  • 1 Pinch allspice, ground
  • 0.75 Teaspoons celery seed
  • 0.5 Teaspoons dried thyme
  • 0.5 Teaspoons seasoning salt
  • 2 Tablespoons dry white wine
  • 0.25 Teaspoons cayenne pepper, ground
  • 0.25 Teaspoons chicken bouillon powder

Steps

  1. In a large stock pot, sauté the onion, celery, carrots, garlic, and parsley in margarine until soft but not browned.
  2. Sprinkle in the flour and cook, stirring for 2 minutes.
  3. Slowly add the chicken broth, stirring continuously to avoid lumps.
  4. Add the milk, potatoes, Worcestershire sauce, mustard powder, allspice, celery seed, thyme, seasoning salt, white wine, cayenne pepper, and chicken bouillon powder.
  5. Allow the mixture to simmer and thicken, stirring frequently, until the potatoes are cooked through, approximately 25 minutes.
  6. During cooking, break up the potatoes with the back of a spoon to achieve a creamy texture.
  7. Serve warm and enjoy the comforting flavors of this creamy potato soup.
