  • 1 Pinch crushed red pepper flakes, to taste
  • 3 Cloves garlic, minced
  • 1 Tablespoon (tbsp) paprika
  • 1 Teaspoon (tsp) dried thyme
  • 2 15 Ounces (oz) cans cannellini beans, drained
  • 4 Cups low-sodium chicken stock
  • 0.5 Head Savoy cabbage, minced

Steps

  1. Heat the olive oil in a Dutch oven over medium heat.
  2. Add the sausage to the pot, cooking and breaking it up with a spatula until browned and crumbly, about 5 to 7 minutes. Remove the sausage with a slotted spoon, leaving the oil in the pot.
  3. Add the onions, carrots, celery, salt, and red pepper flakes to the pot. Stir to coat the vegetables with oil and sauté until they start to soften, about 8 minutes.
  4. Add the minced garlic, paprika, and thyme, stirring until fragrant, about 1 minute.
  5. Return the sausage and any accumulated juices to the pot. Stir in the beans and chicken stock. Add water if needed to cover. Bring to a boil, reduce heat to low, cover, and simmer for 30 minutes.
  6. Add the minced cabbage and simmer, uncovered, until the cabbage softens, about 30 minutes more.
