Ingredients

  • 6 Whole sweet potatoes, peeled
  • 1 Cup white sugar
  • 0.5 Cup milk
  • 0.5 Cup butter, melted
  • 1 Teaspoon vanilla extract
  • 2 Large eggs, whisked
  • 0.5 Teaspoon salt
  • 1 Cup dark brown sugar
  • 0.33 Cup all-purpose flour
  • 0.33 Cup butter, melted
  • 1 Cup pecans, minced

Steps

  1. Place sweet potatoes in a large stockpot and cover with 1 inch of water. Bring to a boil over medium heat and cook until fork-tender, about 20 minutes. Drain, allow to cool, and remove skins.
  2. Preheat the oven to 350 degrees F (175 degrees C). Grease or butter a 2-quart casserole dish.
  3. Place the peeled sweet potatoes in a mixing bowl. Beat with an electric mixer on low speed until the potatoes begin to break up. Increase speed to medium-high and blend until smooth.
  4. Reduce speed to low and add white sugar, milk, melted butter, vanilla extract, whisked eggs, and salt. Mix well.
  5. Pour the sweet potato mixture into the prepared casserole dish.
  6. In a small bowl, mix together dark brown sugar, all-purpose flour, melted butter, and minced pecans to make the topping. Sprinkle the mixture evenly over the sweet potato mixture.
  7. Bake in the preheated oven until the center of the soufflé is set, about 40 minutes.
