Ingredients

  • 6 Large eggs, whisked
  • 3 Pounds (lb) skinless, boneless chicken breast halves, divided
  • 6 Tablespoons (tbsp) butter, melted
  • 1 Pound (lb) mushrooms, sliced
  • 1 Cup bread crumbs, seasoned
  • 1 Pinch vegetable oil, as needed
  • 6 Fluid Ounces (fl oz) white wine, dry
  • 0.5 Pound (lb) Muenster cheese, sliced

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Whisk the eggs in a small bowl. Add the chicken pieces and marinate for at least 30 minutes.
  3. Meanwhile, melt the butter in a large skillet over medium heat. Add the sliced mushrooms and sauté until softened.
  4. Remove the chicken from the egg mixture and coat each piece in the seasoned bread crumbs.
  5. Heat a small amount of vegetable oil in a large skillet over medium-high heat. Brown the chicken pieces on all sides, working in batches if needed.
  6. Transfer the browned chicken pieces to a 9x13 inch glass baking dish. Layer with the sautéed mushrooms.
  7. Pour the dry white wine over the chicken and mushrooms, then cover with the sliced Muenster cheese.
  8. Bake in the preheated oven for 30 to 40 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
