Ingredients

  • 1 Tablespoon (tbsp) olive oil
  • 2 6 Ounce (oz) skinless, boneless chicken breast halves
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 2 Pieces cornbread, crumbled
  • 2 Slices bacon, crumbled
  • 2 Tablespoons (tbsp) celery, minced
  • 2 Tablespoons (tbsp) onion, minced
  • 2 Tablespoons (tbsp) butter, melted
  • 0.25 Cup chicken stock
  • 0.33 Cup chicken stock
  • 0.33 Cup plum jam

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Heat olive oil in a skillet over high heat. Using a paring knife, cut a pocket into the side of each chicken breast. Place the chicken in the skillet and sear until lightly browned on both sides, but not cooked through. Set aside.
  3. In a bowl, combine crumbled cornbread, bacon, celery, onion, melted butter, and 0.25 cup of chicken stock. Mix until well combined. Stuff each chicken breast with the cornbread mixture.
  4. Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for 25 minutes.
  5. While the chicken is baking, bring 0.33 cup of chicken stock to a simmer in a saucepan. Whisk in the plum jam and simmer over medium-low heat until most of the chicken stock has evaporated, creating a glaze.
  6. Pour the plum glaze over the chicken breasts and return to the oven. Cook for an additional 10 minutes, or until the center of the stuffed breast reaches 160 degrees F (70 degrees C).
