- 1 Tablespoon (tbsp) olive oil
- 2 6 Ounce (oz) skinless, boneless chicken breast halves
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 2 Pieces cornbread, crumbled
- 2 Slices bacon, crumbled
- 2 Tablespoons (tbsp) celery, minced
- 2 Tablespoons (tbsp) onion, minced
- 2 Tablespoons (tbsp) butter, melted
- 0.25 Cup chicken stock
- 0.33 Cup chicken stock
- 0.33 Cup plum jam
Steps
- Preheat your oven to 350 degrees F (175 degrees C).
- Heat olive oil in a skillet over high heat. Using a paring knife, cut a pocket into the side of each chicken breast. Place the chicken in the skillet and sear until lightly browned on both sides, but not cooked through. Set aside.
- In a bowl, combine crumbled cornbread, bacon, celery, onion, melted butter, and 0.25 cup of chicken stock. Mix until well combined. Stuff each chicken breast with the cornbread mixture.
- Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for 25 minutes.
- While the chicken is baking, bring 0.33 cup of chicken stock to a simmer in a saucepan. Whisk in the plum jam and simmer over medium-low heat until most of the chicken stock has evaporated, creating a glaze.
- Pour the plum glaze over the chicken breasts and return to the oven. Cook for an additional 10 minutes, or until the center of the stuffed breast reaches 160 degrees F (70 degrees C).
