- 4 Slices whole wheat bread
- Soup:
- 1 Cup onion, minced
- 2 Tablespoons (tbsp) butter, melted
- 29 Ounces (oz) cans chicken broth
- 15 Ounces (oz) can pumpkin, pureed
- 1 Teaspoon (tsp) salt
- 0.25 Teaspoon (tsp) cinnamon, ground
- 0.125 Teaspoon (tsp) ginger, ground
- 0.125 Teaspoon (tsp) black pepper, ground
- 1 Cup heavy whipping cream
Steps
- Preheat the oven to 400°F (200°C). In a small bowl, mix softened butter, brown sugar, and cinnamon. Spread this mixture evenly over one side of each bread slice. Place the bread, buttered side up, on a baking sheet. Bake for 8 to 10 minutes until the bread is crisp and the topping is bubbly. Cut each slice into 8 small triangles or squares.
- In a medium saucepan, sauté the minced onion in melted butter until tender.
- Add one can of chicken broth to the saucepan. Stir well and bring to a boil. Cover, reduce heat, and simmer for 15 minutes.
- Transfer the broth mixture to a blender or food processor. Process until smooth.
- Return the smooth mixture to the saucepan. Add the remaining can of broth, pumpkin puree, salt, ground cinnamon, ground ginger, and ground black pepper. Stir well and bring to a boil. Cover, reduce heat, and simmer for an additional 10 minutes, stirring occasionally.
- Stir in the heavy whipping cream and heat through without boiling.
