Ingredients

  • Cinnamon Croutons:
  • 3 Tablespoons (tbsp) butter, softened
  • 1 Tablespoon (tbsp) brown sugar
  • 0.25 Teaspoon (tsp) cinnamon, ground
  • 4 Slices whole wheat bread
  • Soup:
  • 1 Cup onion, minced
  • 2 Tablespoons (tbsp) butter, melted
  • 29 Ounces (oz) cans chicken broth
  • 15 Ounces (oz) can pumpkin, pureed
  • 1 Teaspoon (tsp) salt
  • 0.25 Teaspoon (tsp) cinnamon, ground
  • 0.125 Teaspoon (tsp) ginger, ground
  • 0.125 Teaspoon (tsp) black pepper, ground
  • 1 Cup heavy whipping cream

Steps

  1. Preheat the oven to 400°F (200°C). In a small bowl, mix softened butter, brown sugar, and cinnamon. Spread this mixture evenly over one side of each bread slice. Place the bread, buttered side up, on a baking sheet. Bake for 8 to 10 minutes until the bread is crisp and the topping is bubbly. Cut each slice into 8 small triangles or squares.
  2. In a medium saucepan, sauté the minced onion in melted butter until tender.
  3. Add one can of chicken broth to the saucepan. Stir well and bring to a boil. Cover, reduce heat, and simmer for 15 minutes.
  4. Transfer the broth mixture to a blender or food processor. Process until smooth.
  5. Return the smooth mixture to the saucepan. Add the remaining can of broth, pumpkin puree, salt, ground cinnamon, ground ginger, and ground black pepper. Stir well and bring to a boil. Cover, reduce heat, and simmer for an additional 10 minutes, stirring occasionally.
  6. Stir in the heavy whipping cream and heat through without boiling.
