Ingredients
- 0.75 Cups (cups) olive oil
- 3 Tablespoons (tbsp) garlic, minced
- 2 Tablespoons (tbsp) fresh rosemary, minced
- 1 Tablespoon (tbsp) fresh basil, minced
- 1 Tablespoon (tbsp) Italian seasoning
- 1 Teaspoon (tsp) black pepper, ground
- 1 Pinch salt, to taste
- 12 Pounds (lb) whole turkey
Steps
- Preheat your oven to 325 degrees F (165 degrees C).
- In a small bowl, combine olive oil, minced garlic, minced rosemary, basil, Italian seasoning, ground black pepper, and salt. Mix well and set aside.
- Thoroughly wash the turkey inside and out, then pat dry. Remove any large fat deposits. Carefully loosen the skin from the breast by working your fingers between the breast and the skin, extending to the end of the drumstick. Be cautious not to tear the skin.
- Generously spread the rosemary mixture under the breast skin and down the thigh and leg using your hand. Rub the remaining mixture over the outside of the breast. Use toothpicks to secure the skin over any exposed breast meat.
- Place the turkey on a rack in a roasting pan. Add about 1/4 inch of water to the bottom of the pan. Roast in the preheated oven for 3 to 4 hours, or until the internal temperature of the turkey reaches 180 degrees F (80 degrees C).
