Ingredients

  • 2 Tablespoons ghee, melted
  • 1 Whole red onion, diced
  • 0.5 Teaspoon cumin seed
  • 1 Inch piece cinnamon stick
  • 7 Whole peppercorns
  • 1 Tablespoon ginger garlic paste
  • 1 Whole tomato, diced
  • 0.5 Cup water
  • 0.5 Cup peas
  • 0.5 Cup carrot, diced
  • 0.5 Cup potato, diced
  • 1 Cube chicken bouillon
  • 1 Teaspoon salt
  • 0.25 Teaspoon red chile pepper, ground
  • 0.25 Teaspoon black pepper, ground
  • 0.5 Teaspoon garam masala
  • 0.25 Teaspoon turmeric, ground
  • 4 Cups water
  • 2 Cups basmati rice, rinsed and drained

Steps

  1. Heat the ghee in a large pot over medium heat. Add the diced onion and sauté until translucent.
  2. Stir in the cumin seeds, cinnamon stick, and peppercorns, cooking until fragrant.
  3. Add the ginger garlic paste and diced tomato, cooking until the tomato softens.
  4. Pour in 0.5 cup of water, then add peas, carrots, and potatoes. Stir in the chicken bouillon cube, salt, red chile pepper, black pepper, garam masala, and turmeric.
  5. Add 4 cups of water and bring to a boil. Stir in the basmati rice, reduce heat to low, cover, and simmer until the rice is tender and the water is absorbed, about 15-20 minutes.
  6. Fluff the rice with a fork and serve hot.
