Ingredients
- 4 Boneless skinless chicken breasts, tenderized
- 0.33 Cups lemon juice
- 0.25 Cups olive oil
- 1 Teaspoon lemon zest, zested
- 1 Teaspoon dried basil
- 1 Teaspoon dried oregano
- 1 Teaspoon dried parsley
- 0.75 Teaspoon salt
- 0.5 Teaspoon granulated garlic
- 0.125 Teaspoon black pepper
- 1 Whole lemon, sliced
Steps
- Pound the chicken breasts on a clean work surface to an even 1-inch thickness and place them in a gallon-sized resealable bag.
- In a bowl, whisk together lemon juice, olive oil, lemon zest, basil, oregano, parsley, salt, granulated garlic, and black pepper. Pour the marinade over the chicken, seal the bag, and refrigerate for 30 minutes to 1 hour.
- Preheat the oven to 425 degrees F (220 degrees C).
- Remove the chicken from the marinade and place it in a large baking dish, along with 2 tablespoons of the marinade. Discard the remaining marinade. Place 2 lemon slices on each breast.
- Bake in the preheated oven until the chicken is no longer pink in the center and the juices run clear, about 22 to 24 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Slice the breasts on the diagonal and drizzle with pan juices, if desired.
