Ingredients
- 1 Cup unsalted butter, plus more for greasing the pan
- 4.5 Cups tart apples, peeled
- 1 Tablespoon lemon juice
- 1 Cup light brown sugar, packed
- 0.5 Cup light brown sugar, packed
- 1 Teaspoon ground cinnamon
- 0.5 Teaspoon ground cinnamon
- 0.75 Cup white sugar
- 1 Teaspoon salt
- 0.5 Teaspoon ground nutmeg
- 3 Large eggs, whisked
- 2 Teaspoons vanilla extract
- 1 Cup full-fat sour cream
- 0.33 Cup apple cider
- 2 Cups all-purpose flour
- 1 Teaspoon baking powder
- 0.25 Teaspoon baking soda
Icing
- 1 Cup confectioner's sugar
- 1 Pinch salt, to taste
- 0.25 Teaspoon vanilla extract
- 5 Tablespoons heavy cream
Steps
- Place 1 cup of unsalted butter in a light-colored medium saucepan. Cook over medium-low heat, stirring frequently until the butter is browned, about 6 to 8 minutes. Pour the browned butter into a large mixing bowl and allow it to cool for 15 minutes.
- In a large bowl, combine the apples and lemon juice. Toss to coat. Add 0.5 cup of brown sugar and 1 teaspoon of cinnamon, tossing until thoroughly combined. Set aside.
- Preheat the oven to 350°F (175°C). Generously butter a 9x13-inch baking dish.
- To the cooled brown butter, add white sugar, the remaining 0.5 cup of brown sugar, salt, the remaining 0.5 teaspoon of cinnamon, and nutmeg. Whisk until combined. Add in eggs and vanilla, whisking until thoroughly combined. Whisk in sour cream and apple cider. Add in flour, baking powder, and baking soda, stirring until the batter is mostly smooth.
- Pour the batter into the prepared pan and smooth it into an even layer. Scatter the apples and their accumulated juices evenly over the top of the batter.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out mostly clean, about 55 to 65 minutes. Allow the cake to cool for about 15 to 20 minutes.
- Meanwhile, make the icing. Whisk together the confectioner's sugar, salt, vanilla, and heavy cream until it reaches a smooth, pourable consistency, adding more heavy cream if needed. Pour the icing over the warm cake and smooth it over the top to evenly coat. Serve the cake warm.
