Ingredients

  • 1 Cup butter, softened
  • 2 Cups white sugar
  • 4 Whole eggs
  • 0.5 Cups buttermilk
  • 1 Teaspoon (tsp) baking soda
  • 3.5 Cups all-purpose flour
  • 1 Pound (lb) dates, minced
  • 1 Pound (lb) orange slices candy, minced
  • 2 Cups pecans, minced
  • 1.33 Cups coconut, shredded
  • 1 Cup orange juice
  • 2 Cups confectioners' sugar

Steps

  1. Preheat your oven to 250 degrees F (120 degrees C). Lightly grease and flour a 10-inch tube pan.
  2. In a mixing bowl, cream the butter and white sugar until smooth. Add the eggs one at a time, beating well after each addition.
  3. Dissolve the baking soda in the buttermilk and add it to the creamed mixture.
  4. In a large bowl, combine the flour, minced dates, minced orange slices, and minced pecans. Stir to coat each piece with flour.
  5. Add the flour mixture and shredded coconut to the creamed mixture. Stir with a wooden spoon to form a very stiff dough.
  6. Pour the batter into the prepared tube pan.
  7. Bake for 2 1/2 to 3 hours.
  8. As soon as the cake comes out of the oven, combine the orange juice and confectioners' sugar and pour over the hot cake.
  9. Let the cake stand in the pan overnight before serving.
