Ingredients
- 1 Cup butter, softened
- 2 Cups white sugar
- 4 Whole eggs
- 0.5 Cups buttermilk
- 1 Teaspoon (tsp) baking soda
- 3.5 Cups all-purpose flour
- 1 Pound (lb) dates, minced
- 1 Pound (lb) orange slices candy, minced
- 2 Cups pecans, minced
- 1.33 Cups coconut, shredded
- 1 Cup orange juice
- 2 Cups confectioners' sugar
Steps
- Preheat your oven to 250 degrees F (120 degrees C). Lightly grease and flour a 10-inch tube pan.
- In a mixing bowl, cream the butter and white sugar until smooth. Add the eggs one at a time, beating well after each addition.
- Dissolve the baking soda in the buttermilk and add it to the creamed mixture.
- In a large bowl, combine the flour, minced dates, minced orange slices, and minced pecans. Stir to coat each piece with flour.
- Add the flour mixture and shredded coconut to the creamed mixture. Stir with a wooden spoon to form a very stiff dough.
- Pour the batter into the prepared tube pan.
- Bake for 2 1/2 to 3 hours.
- As soon as the cake comes out of the oven, combine the orange juice and confectioners' sugar and pour over the hot cake.
- Let the cake stand in the pan overnight before serving.
